PreparationThe fruit used to make our jams is picked directly from our company orchard. The first step is washing the fruit, removing any excess material (e.g., leaves, twigs, etc.). The fruit is then carefully dried and cut into small pieces.
At this point, the fruit is cooked with 30% sugar. First, it is brought to a boil, then cooked over medium heat. This last step lasts 20 minutes.
At this point we move on to packaging, inside glass jars that are sterilized in an autoclave, at 120°C, for 20 minutes.
